Responsibilities
As Head Bartender at Stoke, you will lead the bar team in a fully operating restaurant and ensure consistent, high-quality beverage execution on a daily basis. Located in the heart of Thonglor, Stoke is a 300sqm venue centered around an open-fire kitchen delivering bold, high-quality flavors. The bar plays a key role in the overall guest experience, complementing the kitchen with drinks that are thoughtful, approachable, and well-executed.
Leadership & Team Management
- Lead the bar team during daily service, ensuring smooth and efficient operations.
- Train, mentor, and develop bartenders and baristas to improve product knowledge, service skills, and consistency.
- Set clear expectations and maintain accountability within the team.
- Assist with staff scheduling, performance reviews, and team development.
- Foster a positive, professional, and motivated team environment.
Operations & Quality Control
- Ensure all drinks are prepared consistently according to recipes and presentation standards.
- Maintain high standards of cleanliness, organization, and hygiene at all times.
- Oversee bar opening, closing, and weekly deep cleaning procedures.
- Monitor service flow and identify opportunities to improve speed and efficiency.
- Ensure full compliance with SOPs and operational guidelines.
Inventory & Cost Management
- Manage inventory, ordering, and supplier coordination.
- Control stock levels, minimize waste, and monitor product usage.
- Track beverage cost and work towards maintaining target margins.
- Conduct regular stock counts and ensure proper stock rotation (FIFO).
Creativity & Menu Development
- Maintain and update the cocktail menu in line with Stoke’s concept.
- Introduce seasonal updates and new ideas where appropriate.
- Balance creativity with operational practicality and cost efficiency.
- Lead internal tastings and ensure team understanding of all products.
Guest Experience
- Lead by example in delivering warm, engaging, and professional service.
- Build rapport with guests and encourage repeat visits.
- Handle guest feedback effectively and resolve issues when needed.
- Support upselling in a natural and guest-focused way.
Qualifications
- At least 3–5 years of experience in a high-end bar or restaurant environment, with previous experience in a leadership or senior role.
- Excellent English communication skills are required for guest interaction and team coordination.
- Strong technical proficiency in cocktail creation, menu development, and beverage recipe engineering.
- Proven ability to train, mentor, and develop both bartenders and baristas.
- Experience in inventory management, supplier coordination, and beverage cost control.
- Highly organized with a deep understanding of bar SOPs, hygiene standards, and opening/closing procedures.
- Energetic, professional, and capable of leading by example to deliver exceptional hospitality.
- Ability to work effectively in a high-volume, fast-paced environment across multiple floors.
- Familiarity with POS systems and stock rotation (FIFO) practices.
