1. สร้างสรรค์คอนเซปต์เบเกอรี่และของหวานใหม่ๆ ให้สอดคล้องกับเทรนด์ตลาด ความต้องการของลูกค้า และมาตรฐานของแบรนด์
พัฒนาสูตรอาหาร (Formulations) และทำการทดสอบ (Trials) เพื่อประเมินคุณลักษณะด้านประสาทสัมผัส เนื้อสัมผัส ความเสถียร และอายุการเก็บรักษา จัดทำและจัดเก็บสูตรมาตรฐาน (Standardized recipes) ข้อมูลทางเทคนิค พารามิเตอร์ในกระบวนการผลิต และแนวทางการใช้งาน ปรับปรุงผลิตภัณฑ์เดิมที่มีอยู่ ทั้งในด้านคุณภาพ ประสิทธิภาพ ต้นทุน และความเป็นไปได้ในการผลิต
2. วางแผนและดำเนินการทดสอบในห้องแล็บ การทดลองผลิต (Pilot runs) และการทดสอบเดินเครื่องในโรงงานก่อนการเปิดตัวสินค้า
แก้ไขปัญหาด้านสูตร กระบวนการผลิต และประสิทธิภาพการอบในช่วงที่มีการขยายกำลังการผลิตสู่ระดับอุตสาหกรรม (Mass production) ประสานงานอย่างใกล้ชิดกับทีมผลิต, QA/QC, วิศวกรรม, จัดซื้อ และซัพพลายเชน
3. ตีโจทย์ความต้องการและสเปกจากลูกค้าให้เป็นแผนการพัฒนาและ Timeline ที่ชัดเจน เตรียมตัวอย่างผลิตภัณฑ์เพื่อนำเสนอและสาธิตทางเทคนิคให้แก่ลูกค้า รวบรวมและนำคำติชมจากลูกค้ามาปรับปรุงผลิตภัณฑ์ให้ดียิ่งขึ้น
4. สรรหาและคัดเลือกวัตถุดิบรวมถึงซัพพลายเออร์รายใหม่ โดยพิจารณาจากประสิทธิภาพ คุณภาพ และความถูกต้องตามข้อกำหนด
ทำการทดสอบการใช้งานวัตถุดิบ (Application testing) และบันทึกข้อมูลส่วนผสมและสูตร สนับสนุนการวิเคราะห์ต้นทุนเบื้องต้นและพัฒนาวัตถุดิบทางเลือกเพื่อลดความเสี่ยงและเพิ่มขีดความสามารถในการแข่งขัน
1. ประกาศนียบัตรวิชาชีพชั้นสูงในสาขา Bakery & Pâtisserie Arts, Culinary Arts หรือ ปริญญาตรี (Bachelor’s degree) ในสาขา วิทยาศาสตร์การอาหาร (Food Science), เทคโนโลยีอาหาร (Food Technology), วิศวกรรมอาหาร (Food Engineering) หรือสาขาที่เกี่ยวข้อง
2. มีประสบการณ์อย่างน้อย 3–5 ปี ในด้านการวิจัยและพัฒนา (R&D) ผลิตภัณฑ์เบเกอรี่หรือขนมหวาน หากมีประสบการณ์ในโรงงานอุตสาหกรรม จะได้รับการพิจารณาเป็นพิเศษ
3. มีความเข้าใจอย่างลึกซึ้งเกี่ยวกับ Bakery Formulation (การจัดทำสูตร), พารามิเตอร์ในกระบวนการผลิต และพฤติกรรมของผลิตภัณฑ์เบเกอรี่
4. มีความคิดสร้างสรรค์ ทำงานเชิงรุก และมุ่งเน้นการแก้ปัญหา มีความรับผิดชอบสูงและมีความรู้สึกเป็นเจ้าของงานที่ได้รับมอบหมาย
สามารถทำงานร่วมกับทีมที่หลากหลาย (Cross-functional teams) ได้อย่างมีประสิทธิภาพ มีทักษะการสื่อสารที่ดี
