Responsibilities
R&D / Product Development Officer
- Develop, improve, and optimize frozen bakery products to meet quality, taste, cost, and production efficiency standards
- Scale and refine recipes from lab to industrial production level
- Collaborate with marketing and sales teams to align new product development with market needs
- Work closely with production to ensure recipes are scalable and consistent in quality
- Standardize processes for dough handling, freezing, proofing, and baking
- Prepare product specifications, formulation sheets, and production manuals
- Ensure compliance with food safety regulations including HACCP, GMP, and ISO standards
- Maintain accurate records of experiments, trials, and results
- Evaluate and source ingredients suitable for frozen bakery applications and conduct ingredient trials
- Provide technical support to production teams during product launches and troubleshooting
Qualifications
- Bachelor's degree in Food Technology, Food Science, Culinary Arts, or related field
- 1–3 years of experience in product development, preferably in frozen bakery or industrial bakery production
- Hands-on experience with recipe scaling from lab to industrial production
- Familiarity with HACCP, GMP, and ISO standards in food manufacturing is an advantage
- Strong documentation skills with attention to detail and accuracy
- Basic knowledge of cost calculation, shelf-life study, and labeling regulations
- Able to work in both laboratory and production floor environments with a hands-on, problem-solving approach
