Responsibilities
Job Summary:
The Shop Manager is responsible for overseeing and managing all Gallothai-operated activities within the hotel premises, including Duc De Praslin retail operations, chocolate classes and experiences, and on-site chocolate tablet production. The role ensures operational excellence, brand consistency, quality standards, and revenue performance aligned with Gallothai, Duc De Praslin and JW Marriott brand expectations.
The ideal candidate has a passion for premium chocolate, retail experience, and the ability to drive store success through hands-on management and customer-focused strategies.
Primary Responsibilities
1. Duc de Praslin Retail Chocolate Shop
- Oversee all aspects of daily shop operations to ensure smooth workflow and customer experience
- Manage retail sales of chocolate beverages, pralines, bonbons, tablets, pastries, seasonal items, gift boxes, etc. as well as reporting to the management
- Ensure premium customer experience and brand presentation aligned with hotel standards.
- Coordinate inventory control and stock replenishment by maintaining optimal inventory levels and liaising with the factory to place product orders as required.
- Handling for the procurement of the shop, including shop supplies and packaging materials
- Take customer orders, prepare beverages, and serve dine-in and takeaway customers.
2. Chocolate Classes & Experience Center
- Plan, coordinate, and oversee all chocolate workshops and experiential programs.
- Manage scheduling for public classes, family-friendly sessions, and private corporate/VIP experiences.
- Ensure all ingredients, tools, and materials are prepared and supplied by Gallothai.
- Maintain consistent quality, hygiene, and safety standards for all sessions.
- Act as the main liaison with hotel marketing and events teams for experience promotion.
- Ensure experiences are positioned as signature guest activities aligned with JW Marriott brand values.
3. On-Site Thai Chocolate Tablet Production
- Oversee small-scale on-site production of Thai chocolate tablets using local cacao.
- Ensure production meets Gallothai quality, food safety, and brand standards.
- Coordinate production planning for: In-room amenities, Turn-down gifts, F&B usage (desserts, pastries, beverages), Retail and gifting purposes
- Manage production records, yield control, and quality documentation.
- Coordinate with Gallothai central team on recipes, packaging, and seasonal development.
4. Management & Reporting
- Act as the main on-site representative of Gallothai.
- Prepare and submit regular operational, sales, and performance reports.
- Monitor KPIs including revenue, cost control, customer satisfaction, and workshop utilization.
- Ensure compliance with hotel policies, local regulations, and Gallothai SOPs.
- Identify opportunities for revenue growth, new experiences, and product innovation.
Qualifications
Qualification Required:
- Education: Bachelor's degree in any field.
- Minimum 3 years of experience in retail operations, F&B, hospitality, or experiential retail.
- Prior experience in customer-facing roles within luxury retail, high-end F&B industry
- Strong operational management and leadership skills.
- Knowledge of chocolate, pastry, or culinary operations is an advantage.
- Ability to work closely with hotel management and cross-functional teams.
