Responsibilities
ด้านการบริหารร้าน (Operations)
- บริหารการดำเนินงานของร้านให้เป็นไปตามมาตรฐาน
- ดูแลการเปิด–ปิดร้าน และความพร้อมในการให้บริการ
- ควบคุมคุณภาพการบริการ ความสะอาด และบรรยากาศของร้าน
- บริหารการให้บริการในช่วงที่มีลูกค้าจำนวนมาก
- แก้ไขปัญหาเฉพาะหน้าและข้อร้องเรียนของลูกค้า
- บริหารทีมงานจัดตารางการทำงานให้เหมาะสมกับปริมาณลูกค้า
- สอนงาน ฝึกอบรม และพัฒนาพนักงาน
- ประเมินผลการปฏิบัติงานและสร้างแรงจูงใจให้ทีม
- สร้างวัฒนธรรมการทำงานที่ดีและเน้นการบริการ
- ผลักดันยอดขายให้เป็นไปตามเป้าหมาย
- วิเคราะห์ยอดขายและพฤติกรรมลูกค้า
- วางแผนโปรโมชั่นร่วมกับฝ่ายการตลาด
- เพิ่มยอดขายด้วย Upselling และ Cross-selling
- วิเคราะห์ Product Mix และ Menu Performance
- คิดค้นและพัฒนาสูตรเครื่องดื่ม (Signature Menu และ Seasonal Menu)
- พัฒนาเมนูเครื่องดื่ม เบเกอรี่ และของฝากต่างๆ
- จัดทำ Standard Recipe และ Product Manual
- จัดทำ SOP เครื่องดื่ม และการบริการ
- พัฒนาสินค้าใหม่ตามเทรนด์และความต้องการของลูกค้า
- คำนวณ Recipe Costing
- วิเคราะห์ Food Cost และ Beverage Cost
- คำนวณ Yield, GP%, Margin และ Selling Price
- ควบคุมต้นทุนและลดการสูญเสีย
- วิเคราะห์กำไรของแต่ละเมนู
- วางแผนการสั่งซื้อวัตถุดิบ
- บริหารสต็อกกาแฟ เบเกอรี่ และของฝาก
- ควบคุม Shelf Life และการหมุนเวียนสินค้า (FIFO/FEFO)
- ตรวจสอบคุณภาพวัตถุดิบและผู้จำหน่าย
- ควบคุมมาตรฐานการชงกาแฟและเครื่องดื่ม
- ตรวจสอบคุณภาพสินค้าให้สม่ำเสมอ
- ดูแลสุขอนามัยและความปลอดภัยอาหาร
- ตรวจสอบความพร้อมของอุปกรณ์และเครื่องชงกาแฟ
- ตรวจสอบยอดขายและเงินสดประจำวัน
- วิเคราะห์รายงานยอดขายและต้นทุน
- จัดทำรายงานเสนอผู้บริหาร
- เสนอแนวทางเพิ่มยอดขายและลดต้นทุน
